Cookie Recipes

Chocolate Gooey Butter Cookies, submitted by StokedWifey

Ingredients:
1 (8-oz) package cream cheese, room temp
1 stick butter, room temp
1 egg1 tsp vanilla extract
1 (18-oz) box moist chocolate cake mix
Confectioner's sugar, if desired

Directions:
- Preheat oven to 350.
- Beat cream cheese and butter until smooth.
- Beat in the egg.
- Beat in vanilla extract.
- Beat in cake mix.
- Cover and refrigerate for 2 hours to firm the dough.
- Roll chilled batter in tablespoon-sized balls.
- Roll each ball in confectioner's sugar. (I don't always do this. They're less pretty)
- Place on ungreased cookie sheet, roughly 2 inches apart.
- Bake 12 minutes.  The insides stay gooey with such  little time in the oven.
- Sprinkle with more confectioner's sugar, if desired.

(You can substitute any cake mix.  I've done Funfetti before!)
