Potato Corn Chowder, submitted by ogrady88
IN LARGE POT:
5 strips of bacon
4 scallions, chopped
Saute' with bacon until crisp.
ADD:
4 large baking potatoes, peeled and chopped
1 T. parsley
Salt and Pepper to taste
4 C. Chicken stock or broth
Bring to boil. Cook 15-20 minutes or until potatoes are done. Lower heat.
In a separate pot,
1 1/2 T. Butter
2 T. Flour
2 1/2 C. Milk
Make a white sauce by melting butter, adding flour to form a thick, even mixture, and slowly stirring in milk, whisk for a few minutes. Add to soup.
Add the following ingredients and heat over very low only until warm - I turn it off:
1 1/2 C. Heavy whipping cream
2 1/2 C. Frozen corn, thawed
Serve immediately - Do not allow to get too hot or it will be ruined
